Doh Neiiong

This dish is a mixture of pork and black sesame seeds; though simple in cooking, the flavor of the sesame seeds adds another twist to the dish that makes it mouth-watering. It is cooked with the use of juicy pork with black sesame paste with some onion, ginger& garlic.

RECIPE:

Ingredients:

50gm/3tsp black seasame seeds 500gm/1 lb potatoes or pork 2tbsp mustar oil or any cooking oil  1 tsp of ginger garlic paste and salt as per the taste.

Method:

1. Heat a pan and dry roast black sesame until it the seeds pops. Cool and grind it in to paste by adding little water.
2. Wash the potatoes and chop them into bite size pieces. ( Replace potato with any pork).
3. Add oil and fry potatoes for 5 minutes and add ginger garlic paste, sesame paste. (Cook the pork without oil in a cooker for 10 minutes and then add oil, ginger garlic paste, sesame seeds paste (the oil will come out from the pork pieces naturally when heated)).
5. Cook it in low heat for seven minutes. Add water, salt and cover the pan with lid and cook it for 10 ~ 15 minutes until done.

Doh Khlieh

If you love pork you should try Dohkhlieh which is another popular cuisine among the Khasis which includes boiled pork, onions and chilies.

Recipe:

2 medium-sized onions
A 3-inch section of ginger
200g pork (meat, fat, intestines and a quarter-portion of brain), cut into cubes
Salt to taste

Method

Boil the meat in water, with the brain wrapped well in a banana leaf (else, it will disintegrate), until it’s soft and well cooked. Let it cool. Thinly slice the onions and grind the ginger to a chunky paste with a little water. Mix the onion and ginger with the brain and then mix in the rest of the meat. Add salt to taste. Serve on a banana leaf with jadoh (rice).

Doh Thad

Doh Thad/doh syang/ Kha rang is Smoked meat of either pork, beef or fish. Pork and beef are smoked and then either fried with onions and chillies or made into a curry. Smoked Fish is either made into a salad with onions and ginger or made into fish balls.
